I am Carrie Nielsen, a 37 year old from Omaha, Nebraska. I received a B.S. in Foods and Nutrition from Northwest Missouri State and a M.S. in Dietetics from the University of Nebraska – Lincoln. I like to stay active during my free time by running and biking.
This will be my 3rd year participating on the triathlon sport. I always thought it would be fun to do this kind of event. Since it is a Hy-Vee sponsored event and it promote health & wellness, I thought it would be a good fit for something different to do. My kids have participated in the IronKids events for the past couple of years. 2 years ago, I decided to form a relay with 2 other Hy-Vee dietitians, Susan Coe from Omaha #11 and Alexandra Economy from Winona.
Either biking or running is equally good for me; as a part of a relay I bike because I have one (and now a much better one) to use. With 3 young kids at home, training early in the morning has been my routine. I look forward to connecting with my fellow Hy-Vee employees at this year’s triathlon.
